A high-school sweetheart couple become business owners, while alsobeing full-time college students. Kimberly Nieto and Brian Cordova have encouraged many college students to pursue higher education but also maintain a side hustle. Their drive to success and provide for their family has maintained their motivation to adventure in the food truck industry, in the Austin area. This includes "El Mango Feliz." Where they serve authentic Mexican tacos, and have open up a few locations around Austin area. In 2020, Nieto was focusing strictly on school and Cordova was a cashier at a local food truck. Until their families were impacted by COVID-19, and both started struggling financially. They had to find ways to make ends meet, this is when the idea of opening up a business all began.This idea wasn't anything new to Nieto. Her parent's were in the food business industry for years, where she was always landing a hand. Meanwhile, Cordova worked where food was always presented. With these experiences, they have learned so much about what the food industry has to offer. "There will always be someone that has something to teach you. No matter if they have gone to school or not. I definitely learned that when I used to work in the kitchen." said Cordova. Some daily challenges they encountered were how to balance and run multiple businesses while also maintaining, school and their love life. But despite these challenges, they have worked together to motivate and uplift each other. Their support comes a lot from Nieto's parent's. " Our support system is definitely my parents, like any other business there are days where we aren't making enough money and our business is falling and my parents never fail to help us find new ideas and or even help financially," said Nieto. Besides having a passion to run a business, this couple finds many ways to incorporate ways to uplift college student's to chase their dreams. " Don't feel afraid to open up your own business, even if you don't have any idea of how to run one." said Nieto. Their drive to one day have a better life for themselves and make their parent's proud has been what motivates them to keep going. If there's one thing this couple wants their clients to know, it is to keep going even if you don't know how to begin. " Go for it, do it and use your resources”.
